- Whisk the egg yolks and sugar together until thick ribons form, then slowly add and whish into the milk mixture
- Add the Rum and continue slowly whisking with a hand whisk. Rum can be substitued for brandy.
- Allow to steep over night in the fridge
- Sieve out the mixture removing the cinnamon and vanilla pods
- Whisk egg whites until soft peaks form. Fold into the milk mixture and serve in christmasy glasses or mugs
- Garnish with freshly grated nutmeg and a cinnamon stick, with a mini gingerbread man at the side to dip in :)
